I have an older model which has served me well for several years; I’m thinking of trading up to the current model which has a bit more flexibility.
Problems I’ve had and solutions:
1) failure to rise adequately. In the winter my pantry gets rather cold; when I add cold flour, sugar, and water to the machine, the normal preheat seems inadequate. Solution? Either let the ingredients first come to room temperature, or simply use the delayed bake function. Waking up to the smell of baking bread is a real turn on, anyhow!
2) lopsided loaves. Sometimes the horizontal loaf pan with paddles at either end results in a ball of dough at one end, and after final rise, a loaf baked with a 30 degree tilt. Solution? Check the loaf shape during rising and reshape it if necessary.
3) loaf sticks to non-stick pan. I’ve found this isn’t the loaf sticking to the pan, but the paddles embedded in the bottom of the load and binding on the paddle shafts. Try a little vegetable (some kind of edible) oil on the shafts before putting on the paddles.
I have not found the recipies especially sensitive to small variations in quantity of flour, etc. The only problems I have had are the lack of as much rise as I would like, particularly for the 1 1/2 pound loaf, giving me a heavier loaf than I would like. Usually, this is the result of #1 above. The one feature I would like to see is the ability to manually override the times of a running cycle – e.g., to extend/shorten the rise time. The new model with three user programs may give me a little more flexibility.
We owned a cheaper breadmaker before which delivered mediocre results at best; this Zojirushi breadmaker bakes delicious bread as advertised. Unless you have a dedicated baker in your neighborhood who bakes conscientiously with a well-seasoned brick oven, this breadmaker is a nifty alternative. Not to repeat too much what others have said before me, the double-blade mixing action proves essential when baking wholefood breads (10-grain flower, pumkin & sunflower seeds, flax kernels, bran flakes etc.); a single-blade machine just has a difficult time mixing those ingredients evenly. A thoroughly and evenly mixed bread dough bakes evenly.
The Zojirushi is also easy to clean. A well-designed machine.
Looking at some of the negative reviews posted online for the various machines, I would recommend to very carefully follow the instructions and recipes until you have gained enough experience with breadmakers. Use the best ingredients you can get your hands on for your baking endeavours. Use only the ingredients the recipe call for (unless you are familiar with a recipe), have them fresh and – not to forget – at the right temperature. Enjoy the aroma of fresh bread wake you up in the morning.
